There should, by rights, be far more Vince/Eric out there than there is. astolat has a few stories, which are excellent and get recced everywhere that Vince/Eric is mentioned. If you haven't already, you should definitely read them.
Last Cigarettes (http://fanfic.iridescentglow.com/entourage_lastcigarettes.html) by Nicola is good. This fandom seems to inspire primarily fics in which the pairing is part angst, part sex, part loyalty, and this fits into that lot.
Get Where You've Been Going (http://www.yuletidetreasure.org/archive/28/getwhere.html) by giddygeek is pretty great. I love that it has Vince watching out for E for once, rather than the other way around.
And just because I know you'll dig the title, there's Never Get Involved in a Land War in Asia (http://yuletidetreasure.org/archive/30/neverget.html) by zahra. It's Ari's POV, so It's coarse and not remotely a romance, but there's a general assumption of Vince/Eric to it. And, y'know, the irresistible allusion to the greates movie ever made. :o)
